Mustard Greens With Kale & Artichokes on Red Quinoa
Cut up some Field Roast Italian “Sausage” and fry in a dab
of oil. (Field Roast should give me a
cut for all the advertising I do for them.)
Add:
a clove of garlic
chopped
some leek sliced
green pepper
some kale
artichoke hearts
(not the stuff in the jar or can), use frozen or fresh
some mustard greens
(Mustard greens have a very distinct, biting flavor. They work beautifully with
artichoke hearts, each complementing the other.)
(Actually, just use any vegetables you like.)
Stir fry until the kale is wilted.

DeleteMustard greens (see them under the tomato in the top picture?) are the leaves of the mustard plant; it's seeds are used to make mustard (Dijon mustard).
ReplyDeleteIt'll catch up to you! What a riot! I just had my annual physical. All my numbers were really good. The doctor said, "are you vegan?" When I answered, "yes," she said, "that explains why you are so healthy."
ReplyDeleteI think it's not just being vegan. The whole food, varied diet part is important. You can be a packaged food vegan and that would be unhealthy.
